Finca Aurora Carbonic Maceration (CM) Natural Geisha represents the pinnacle of the Ferrufino family’s technical expertise, blending the elegance of the Geisha varietal with a highly controlled anaerobic fermentation environment.
This specific lot undergoes a precise carbonic maceration phase in sealed tanks to intensify its sweetness and body, resulting in a sophisticated cup profile defined by rich Chocolate Fudge, succulent Rockmelon, and the jammy density of Fresh Fig.
After the fermentation process, the cherries are slow-dried on raised beds for over a month and carefully rested to ensure these complex fruit and dessert-like notes are perfectly preserved for the final brew.
